
Reducing Food Waste
Per the US Department of Agriculture, more than one-third of all available food goes uneaten through loss or waste every year in the United States. According to a recent article, IHG (the InterContinental Hotels Group) is aiming to reduce food waste at its properties by 30%. They are doing so by using a combination of an intelligent camera, smart scales and AI-based smart meter technology “to analyze ingredients during food preparation and food on plates returned to the kitchen”. The InterContinental Fujairah Resort in United Arab Emirates lowered food waste by more than 50 percent in six months once this system was implemented.
In 2018, Champions 12.3 reported that for every dollar that hotels invested in programs to reduce kitchen food waste, they saved an average of seven dollars in operating costs.
